Maple Oatmeal Flax Cookies

Growing up oatmeal cookies were always my favourite! Naturally, it's been my mission to find a healthy replacement that's 100% nutritionist approved!

So I created these little bites of heaven:

Maple Oatmeal Flax Cookies

(vegan)

Yields: 18

1 cup almond meal

1 cup spelt flour

1 cup rolled oats

1/4 cup ground flax seeds

1/4 cup whole flax seeds

2 tbsp chia seeds

1/2 tsp baking soda

1/2 tsp baking powder

1/4 tsp sea salt

2 tbsp coconut oil, melted

1/2 cup 100% pure maple syrup

1 tbsp unsweetened apple sauce

1 tsp vanilla extract

1 flax egg (1 tbsp ground flax combined with 3 tbsp warm water. Stir. Let stand 10 minutes)

Directions

Preheat oven to 350F. Line a cookie sheet with parchment paper.

Mix dry ingredients in a large bowl: almond meal, spelt flour, oats, ground flax, whole flax seeds, chia seeds, baking powder, baking soda & sea salt.

In a small bowl mix wet ingredients: coconut oil, maple syrup & vanilla extract.

Pour wet ingredients into bowl of dry ingredients with flax egg and combine.

Spoon about 1 tablespoon's worth onto cookie sheet and slightly flatten them out.

Bake for 12-15 minutes.

Once cooled, these will store in an airtight container refrigerated for about 1 week.
